![Creamy fettuccine with mushrooms and Zaatar
A dish that is always on repeat in my kitchen, a fusion between Italian , Japanese and a hello from Lebanon! It tastes divine and you can prepare it in less than half an hour.
Ingredients for 4 persons:
- [ ] 1/2 k button mushrooms
- [ ] 1 pack of fettuccine pasta
- [ ] 800 ml to 1 L cooking cream @pucklebanon
- [ ] 2 small shallots
- [ ] 1 big garlic clove
- [ ] 2 tablespoons Oyster sauce
- [ ] 7 tablespoons soya sauce
- [ ] 10 g butter + 1 tablespoon sunflower oil
- [ ] Ground pepper
- [ ] Fresh Lebanese Zaatar
- [ ] Salt optional
Method:
In a large pot, boil water, add salt.
Meanwhile, in a large skillet, melt butter and oil and brown slightly the sliced mushrooms, it is important to sear them in batches depending on the mushroom quantity, let the mushrooms sear without moving them until light golden, it is an essential step set in order to release the umami taste in the mushrooms. Don’t forget in batches if your skillet is too small or if you are changing the proportions.
Dice the onions, garlic, measure the oyster, sauce soya and keep the cream pack at hand, the step will go faster at this point. Boil the fettuccine and now we can add quickly the shallots over the mushrooms on medium heat, give a stir and add the garlic, stir, now add the oyster and soya sauce and quickly the cream. On low heat, stir and let the cream simmer for 3 minutes.Drop in the fettuccine with 1/2 cup of pasta water and toss . Turn off the heat, season with ground pepper, taste, is the sauce salty enough, don’t forget the soya sauce and pasta water contains salt.
